The white brined cheese of sheep milk is made of raw whole fat sheep milk with added yeast of lactic acid bacteria, through rennet coagulation, with the required processing and undergone the whole process of ripening, intended as food. It is suitable for direct consumption by people of all ages. It is used for salads, hors d'oeuvres, entrees, or as an ingredient in meatless dishes from the Bulgarian national cuisine.

Ingredients:
1 package of filo pastry
600g. spinach
150g. cheese "Belcho i Sivushka"
50ml vegetable oil
salt
Preparation:
• If the spinach is frozen, you need to unfreeze it totally and strain it off.
• You need to wash the spinach properly and strain it off.
• Stew the spinach in 2-3 tbsp of oil, water and salt till the juice is steamed away and only oil is left.
• Spread the spinach, the crumbled cheese and the oil over each filo pastry
• You need to roll the first layer into a snail roll and place it in the middle of a greased baking tray
• Do the same with the rest of the filo pastry and gently roll them around the first one.
• Оil on top
• Bake in preheated oven at 180 °С until it is red
• After it is baked, cover it with thick paper and place a towel on top for 15 min.
• Cut in pieces and serve
